First step would be to create each different sounding note, not the pitch but the timbre, using the existing OS instruments, then arrange them, then make a bunch of clones to modulate the volume using markers with.
You'd also want to raise the BPM by like 400% so that you can have more control with where the markers will go.
As far as getting the tone down, I'm really not sure.
Maybe layer slap bass with the guitar and mess with EQ.
But sometimes when he plays a note it sounds slightly different
I'd probably just create it with piano since that's way easier and still sounds ok.
