probably some instruments that cant be created with online sequencers instruments, like clavinet or clarinet or some square duty cycles, choir, etc but the problem is that it would crowd the ui and take longer to load the instruments
Why not a timpani drum set?
there is a version of online sequencer that does have 40+ more instruments

but it doesn't have midi export and a lot of the other features that os has been getting
I think uts better if OS gets no new instruments, its limitations can help inspire you
How about a voice? (idk how they would implement, but it would be cool)

An Erhu and I also want notes like a cello or violin notes to be able to be lengthened and make the sound longer
