Whenever I extend/stretch a note, I expect it to be longer like holding a key on an Organ, but it doesn't even work. All it does is just play the note once as if nothing happened, does it only work with certain instruments or does it not work at all?

Read the lucent guide, most instruments don't sustain
The only ones that sustain are Secret Piano, and the 8 bit instruments. You can try pseudosustain though, it should be in Lucent guide
