sound fonts don't export with the midi. MIDI is just instruction that you will have to assign to their own sound in either OS here or any other DAW. Export in WAV for highest quality and if you really want to be extra, record your audio with audacity.
if I am understanding this part correctly, you want the game to interact with your music and have it act in a non linear way. One way to approach this is with stems that are assigned to attenuation circles. You can then program the attenuation to any other parameter like pan, mix, reverb etc. Then you can automate the progression of the music naturally.
If I am not understanding it and you just mean you edit the instruments using the FX, then read the above section.
