I'm actually studying about fugues and its main composer, J.S. Bach. Fugues are essentially songs with a technique called 'counterpoint'. counterpoints are multiple of the same (but varied) melodies at once, and layered upon each other. fugues use these, where it starts with a main melody or theme, then it adds on those counterpoints, making it sound polyphonic.
